At night, you need to find another way into the Cathedral rather than relying on its normal entrance. Once inside, Xanthe can be found in the ritual area with guards nearby.
Reaching her this way allows the fight to happen much earlier than some players may expect.
Is Xanthe Harder If You Fight Her Early?
The boss itself is not an easier early-game version, so reaching Xanthe too soon can make the fight significantly more difficult for your current character.
